Haymarket Update 10/20/2010
It's been crazy busy here at the brewery, but things are moving along. We're obviously a little behind schedule (we’ve heard that happens from time to time in the world of opening restaurants), but we’re currently planning our opening for the first week of December. A few construction-related “surprises” popped up to delay things over the last couple of months, but now that those things are behind us, it’s full speed ahead.
The big news is that our Federal brewing license was recently approved! Brewmaster Pete is anxious to start brewing, although we still have a little ways to go before he can get started. The brewery is tiled and the brewhouse has been moved out of the dining room and into its permanent home. The fermenters and serving vessels, which have also been collecting dust in the bar and dining room, will be moved into their new homes shortly. Most of the kitchen equipment has been delivered and is staged up in the dining room, awaiting installation ASAP. Chef Chris has been busy testing recipes and assembling his team, and we are in the midst of putting together our front-of-house team - both of which are shaping up to be top notch. As soon as the dining room and bar areas are clear of equipment, we can begin painting the ceilings, refinishing the bars, and cleaning up the walls and floors. Not much farther now, Haymarketeers…
